Description

Love falafel, want to be healthy, and want to impress with an appetizer dish that’s pleasing to the eye and delicious on the palate? Oh, there’s more—you can also turn it into a salad, sandwich, or entree plate.

Quick, healthy baked falafel! Once you make this, you might never want a fried falafel again.
Enjoy in a pita as an appetizer with delicious tzatziki sauce and homemade pickled turnips!

Ingredients

  • ¼ cups Finely Diced Onions
  • 1 can (16 Oz. Size) Garbanzo Beans, Drained
  • ¼ cups Chopped Parsley
  • 3 cloves Minced Garlic
  • 1 teaspoon Ground Cumin
  • ¼ teaspoons Ground Coriander
  • ¼ teaspoons Baking Soda
  • ¼ cups Oat Flour
  • ½ cups Chickpea Flour
  • 2 Tablespoons Ground Flax Seed
  • 1 whole Beaten Egg
  • 2 Tablespoons Olive Oil
  • 1 cup Sprouted Bread Crumbs

Preparation

Wrap diced onion in a fine mesh cheesecloth and squeeze out as much liquid as possible. Set aside.

Put garbanzo beans, parsley, garlic, cumin, coriander, and baking soda in food processor. Process until mixture is coarsely pureed.

Combine processed mixture and onion in a bowl. Add flours, ground flax seed, egg, and oil and mix everything thoroughly.

Shape flattened balls (about 4 tablespoons per ball). Roll in breadcrumbs and place on baking sheet. Bake at 350ºF for 30 minutes, flipping halfway.
