Description

The garden is full of fresh veggies this time of year and this is a quick and simple way to use some of them up.

Ingredients

  • 1  Small Green Pepper
  • 1  Small Onion
  • 1  Small Sweet Potato
  • 1  Small Yellow Squash
  • 1  Small Zucchini
  • 2 Tablespoons Olive Oil
  • 1 teaspoon Italian Season
  • ½ teaspoons Garlic Powder
  • ½ teaspoons Oregano
  • ½ teaspoons Rosemary
  • Salt And Pepper
  • 1 loaf Ciabatta Bread
  • 4 Tablespoons Pesto
  • Fresh Mozzarella
  • Fresh Basil Leaves (optional)

Preparation

Of course you can use any variation of veggies and spices. These just happened to be what I had on hand.

Slice all your veggies into bite size pieces. Toss in olive oil and spices until coated. Transfer to a baking sheet and bake for 20 minutes at 450ºF or until tender.

About 3 minutes before they are done, begin prepping your bread. I like to toast both the outside and inside. I spray each side with a little olive oil spray and brown in a frying pan. After you have browned one side and the other is browning, add your pesto spread to one side and your mozzarella to the other. Add veggies and basil, if using. Enjoy!
