Grilled Halloumi is a great light lunch with simple sauteed mushrooms and olives on top.
Saute mushrooms with the butter on medium high heat, about 6 minutes. Meanwhile, turn your grill on and cut halloumi into slices about 1 inch thick.
Once the mushrooms have slightly browned, add the wine and olives. Saute for another 4 mins or so until olives are warmed and the wine has evaporated.
Put cheese slices on the grill. These should take about 5 minutes or so on each side to get nice and soft.
Serve mushrooms and olive mixture atop hot grilled halloumi. Sprinkle fresh chive for garnish.
