Description

Easy, tasty and inexpensive. Good recipe for using those veggies you forgot about in the crisper.

Ingredients

  • 4 cans Plum Tomatoes
  • 1 whole Medium Onion
  • 2 cloves Garlic (or To Taste)
  • Handfuls Of Vegetables; Carrots, Broccoli, Green/red Peppers
  • Dried Or Fresh Basil To Taste
  • Salt Or Soy Sauce To Taste
  • 1 Tablespoon Molasses Or Sugar

Preparation

1. Chop the onions and vegetables into chunky pieces.
2. Chop the garlic finely or use a garlic crusher.
3. Heat a small amount of oil in a large wok or pan and then add the onions and garlic. Fry for a few minutes until slightly browned.
4. Add the vegetables and fry for a few minutes; keep stirring.
5. Add cans of tomatoes and make sure the heat is fairly high.
6. Add a tablespoon of molasses / sugar.
7. Stir and slowly crush the tomatoes and vegetables until it starts to produce a lumpy sauce (should be about 10 minutes).
8. Add a small amount of salt or soy sauce (to taste) then add lots of basil.
9. Keep the whole thing simmering for another 10-15 minutes, keeping check, crushing the tomatoes and stirring the mixture.
10. Serve over whatever type of pasta you wish.

Thanks for the basic recipe and method you’ve given here. Gonna run and make this right now. But I’m going to use home-grown Roma tomatoes and roasted orange, yellow, and red peppers. After sauteing the onion and garlic and cooking the tomatoes, I will blend ‘em all so my husband doesn’t know there’s peppers in it. :o) Will let you know how it turns out. blessings on your day!
