A great picnic recipe. These tarts are great hot or cold. Which makes them great for a picnic or a starter on a warm summer day.
1. Heat the butter on a low heat and add the onion, garlic and thyme. Fry for 20-25 minutes until the onions are soft and golden in colour. Season to taste with salt and pepper and leave to cool.
2. I use small sheets of puff pastry. If you have one large sheet, cut out 8 squares (10 cm).
3. Divide the onion mixture over the 8 squares, leave a small line clear along the edges. Cut the goat cheese in 8 pieces and add one piece to each square.
4. Pop the squares on an oven tray and in a preheated oven (220 degrees C) and bake for 12-15 minutes. You will see the sides rise and the goat cheese will colour on top.
