Description

Hearty and healthy.

Ingredients

  • 1 can (16 Oz. Size) Garbanzo Beans, Rinsed And Drained
  • 2 cloves Garlic, Minced
  • 1 whole Roasted Red Pepper, Chopped
  • ¼ cups Fresh Parsley, Chopped
  • 1 whole Egg
  • ½ cups Dried Breadcrumbs
  • 1-½ teaspoon Oregano
  • ½ teaspoons Red Pepper
  • ½ teaspoons Pepper
  • ½ teaspoons Salt
  • 3 cups Marinara Sauce

Preparation

1. Preheat oven to 350ºF. Prepare baking sheet with foil and cooking spray.
2. In a food processor, pulse beans and red pepper together until chopped, but not smoothly pureed.
3. Transfer to a bowl. Add the rest of the ingredients (except sauce) and mix until well combined.
4. Begin forming “meatballs” (roughly 2 tablespoons each) and place on the baking sheet.
5. Bake for 15-20 minutes or until light golden brown.
6. In a saucepan, heat marinara sauce over medium until simmering. Add “meatballs” and coat with sauce.

Enjoy over pasta or by themselves!

Easy to make, great consistency… a good substitute for ground beef.
