Description

A healthy and filling lunch made with an ancient grain.

Ingredients

  • ½ cups Farro (dry And Uncooked)
  • ½ cups Kidney Beans (boiled And Drained)
  • ½ cups Yellow Onions, Chopped
  • ½ cups Green Peppers, Chopped
  • 2 Tablespoons Sundried Tomatoes (not Oil Packed)
  • 2-½ Tablespoons Grated Mozzarella Cheese
  • ¼ teaspoons Crushed Red Pepper
  • ½ teaspoons Cumin Powder
  • 1 teaspoon Garlic, Chopped
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Green Chilli Sauce
  • 1 Tablespoon Italian Style Bread Crumbs
  • 1 teaspoon Salt (or Salt To Taste)

Preparation

Cook farro as per instructions on the package. Let it cool and grind in a food processor until it is sticky enough to be made into balls.

Preheat the oven at 350 F.

Mash the kidney beans and add them init to the ground farro. Then add all of the remaining ingredients and mix well.

Form into your preferred size round balls (mine were golf ball size) and lay them on a greased rimmed baking sheet (or cookie sheet).

Put pan into the oven and bake for 40-45 minutes or until golden brown.

Serve hot with ketchup or they can be eaten in a wrap.
