Description

A delicious way to use up all that Farmer’s Market produce!

Ingredients

  • 1 cup Fresh Peas
  • 2 cups Dry Pasta
  • ¼ cups Reserved Pasta Water
  • ½ Tablespoons Butter
  • ¾ cups Ricotta Cheese Or Cottage Cheese
  • 3 cloves Garlic
  • 1 teaspoon Olive Oil
  • Salt And Pepper
  • ⅓ cups Freshly Grated Parmesan Cheese
  • ⅓ cups Freshly Grated Mozzarella Cheese
  • ¼ cups Freshly Torn Basil
  • 4 slices Fresh Mozzarella

Preparation

Cook peas and drain. Set aside.

Cook pasta until al dente. Reserve 1/4 cup pasta water and set aside. Drain and toss with peas and butter.

While peas and pasta are cooking, combine ricotta, garlic, and olive oil in a food processor until smooth. Season with salt and pepper. Stir in grated cheeses and basil.

Add cheese mixture to pasta and add reserved pasta water. Stir until smooth. Divide into ramekins and top each with a slice of mozzarella. Broil (400ºF or higher) for about 5 minutes, until cheese has melted.

I followed the recipe as written and this is a most delicious pasta dish. My husband was almost licking the dish as he finished up. Thanks you for sharing a easy great tasting recipe!
