Mashed Cauliflower that gives you the feeling you are eating creamy mashed potatoes but without all of the evil carbs! Perfect for Atkins or anyone watching their calories and carbs.
Crush chicken bouillon cubes into a pan.
Remove stems from cauliflower heads and add to the pan with the chicken bouillon and the clove of garlic (unchopped).
Cover with water, bring to a boil and let cook for 10 minutes.
Drain all in a strainer and transfer to a mixing bowl. Add I Can’t Believe It’s Not Butter spray, salt and pepper to taste and beat on high until smooth and creamy.

I just tried this (with vegetable boullion) and was so impressed with how quick and tasty it was. I have been looking for a simple cauliflower mash recipe and this will now be a permanent staple!
