Easy and healthy! Can easily be doubled.
1. Heat oil in a large saucepan over medium heat. Saute onions, carrots, and garlic until tender.
2. Stir in green pepper and chili powder. Cook until vegetables are tender, about 6 minutes.
3. Stir in mushrooms, tomatoes, beans, and corn. Season (according to taste) with cumin, oregano, and basil. Bring to a boil, and reduce heat to medium.
4. Cover, and simmer for 20 minutes, stirring occasionally
Serve with cornbread and optional cheese.
