Description

A quick and easy way to make a delicious vegetarian meal! These lentils taste so great, your family will be asking for more!

Ingredients

  • 6 cups Vegetable Stock
  • 1 pound Green Or Red Lentils
  • 1 can (14 1/2 Oz. Size) Diced Tomatoes
  • 1 whole Yellow Or White Onion, Chopped
  • 1 teaspoon Garlic Salt
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Curry Powder
  • 1 teaspoon Dried Basil
  • 1 teaspoon Cumin
  • ½ teaspoons Black Pepper

Preparation

1. Wash lentils and discard any yucky pieces.
2. Put all ingredients into slow cooker.
3. Cook on high for 7 hours or until liquid is absorbed. It will resemble a thick chili.

Top it off with a dollop of sour cream or pico de gallo!

I really liked the simplicity of this recipe – it was easy to throw in the crockpot before work. We thought it was a little bland; I added about 1 1/2 T of chili powder before serving it over brown rice and topping it with cheddar cheese. Next time I think I’d leave out the curry powder, as we’re not big curry fans, but that’s just my preference. Thanks for an easy, healthy recipe!
