Description

Vegetarian pasta recipe with spicy curry and sesame.

Ingredients

  • 6 ounces, weight Pasta Of Your Choice
  • 1 teaspoon Curry Powder
  • 1 teaspoon Smoked Paprika
  • ½ teaspoons Turmeric
  • ½ teaspoons Ground Ginger
  • ¼ teaspoons Cinnamon
  • 2 teaspoons Olive Oil
  • ½ cups Red Onion, Sliced
  • 1 clove Garlic, Minced
  • Salt And Pepper
  • 1 cup Zucchini, Cut Into Half Moons
  • ½ whole Bell Pepper, Diced
  • 1 teaspoon Sesame Oil
  • 1 whole Tomato, Sliced
  • ¼ cups Peanuts
  • 1 teaspoon Sesame Seeds

Preparation

Cook pasta according to package directions.

Mix the curry powder, paprika, turmeric, ground ginger and cinnamon together until blended. Set aside.

While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add onions and garlic, season with salt and pepper, and sauté until they begin to soften. Add the zucchini and peppers, along with the sesame oil and curry powder mix. Stir well. Cook over medium heat until the vegetables are tender. Add the tomato, peanuts and sesame seeds.

Serve the vegetable mixture over the pasta and garnish with additional peanuts if desired.

Notes:
You can use any mix of veggies that you would like with this dish.
It can also be served as a side dish, just leave out the pasta.
