Gnocchi with subtle curry flavor mixed with the sweet flavor of golden beets.
Heat a large skillet over medium-high heat. Add olive oil to pan and swirl to coat. Add garlic and cook for 1 minute, being careful not to burn. Add onion and cook 1 minute, stirring as it cooks. Add beets and cook for 3 minutes. Add Swiss chard, vegetable stock, and all spices. Cover and reduce heat to medium. Simmer about 8-9 minutes or until beets are tender. Add gnocchi to mixture, cover and simmer for 3-4 minutes. Remove from heat and serve.
