This is my definition of comfort food. It is great with a side of steamed broccoli or a garden salad! This makes 4 very generous servings or 6 moderate servings. If you make big batches of rice ahead of time, this will really cut down on your cooking time! You can certainly experiment with cheeses in this recipe and it will come out fine!
1. In a large skillet, heat the oil over medium heat. Add onion and salt and pepper to your taste. Cook onions until soft. Add garlic and cook for 1-2 minutes.
2. Add black beans (note: if you are using canned beans, make sure you rinse and drain them very well!) and cheese and cook until heated through.
3. Remove from heat and stir in sour cream if desired (this is optional but I think it provides a nice creamy tang to the dish).
4. Serve over cooked brown rice.
