Description

So yummy and crispy. I will never make oven fries the same again!

Ingredients

  • 6 Tablespoons Olive Oil
  • 8 cloves Garlic, Minced
  • 3 whole Russet Potatoes
  • 3 Tablespoons Cornstarch (Corn Flour)
  • 1-½ teaspoon Sea Salt (coarse Preferred)
  • 1-½ teaspoon Black Pepper
  • ½ teaspoons Garlic Powder
  • 1 teaspoon Dried Parsley

Preparation

Preheat oven to 440ºF (450ºF will work if you cannot control temperature in detailed range, just watch time so the potatoes don’t burn!).

1. Warm oil and garlic in a large, microwaveable bowl for 1 minute.
2. Coat a baking sheet with 5 tablespoons of the warmed oil (try to leave as much garlic behind as possible).
3. Cut potatoes into 8-12 wedges each (varies on how thick you want your fries).
4. Toss potatoes in the bowl with remaining oil and garlic. Wrap bowl tightly with plastic wrap and heat on high for 3-6 minutes until potatoes are translucent around the edges.
5. In a small bowl, mix cornstarch, salt, pepper, garlic powder, and parsley together.
6. Sprinkle spice mix over heated potatoes and toss to coat potatoes evenly.
7. Spread in a single layer on the coated baking sheet.
8. Bake 30-40 minutes, turning halfway through.
9. Serve with your favorite condiment or dipping sauce. I like sour cream and chives!

I made these a second time, and used red skin potatoes (the small round ones)….quartered them and followed the recipe from there…they were SOOOO good! I will probably use the red ones from now on.

I made these a few weeks ago for dinner. I haven’t been able to stop thinking about them since! Hence, I am making them for dinner again tonight! MMMMMMMMMMMMMMMM!!!!!

OMG these are sooo delicious!!! Made them tonight for dinner along with pork marsala..WOW!..I added a little parmesean cheese (fresh, grated)and some fresh chopped chives…these are going to be a regular at my house from now on! Thanks for the recipe:)

Yum! I’m making these for the second time and the ONLY thing I’m doing differently is adding 1/4 shredded parm to sprinkle on top. We first ate them at the “chips” with our fish and are having them tonight with burgers. Thank you!
