Description

Mexican-inspired bulgur dish. Tastes like the inside of a burrito — and works as one too!

Ingredients

  • 2 Tablespoons Vegetable Oil
  • 1 whole Small Onion, Diced
  • ½ whole Green Bell Pepper, Diced
  • 1 whole Jalapeno, Seeded And Finely Diced
  • 2 cloves Garlic, Minced
  • ½ cups Bulgur
  • ¾ cups Water
  • 1 can (15 Oz. Size) Black Beans, Drained
  • 1 Tablespoon Chili Powder
  • 1-½ Tablespoon Cumin
  • 1-½ teaspoon Kosher Salt

Preparation

Heat oil over medium heat in a medium pot. Add onion, bell pepper, and jalapeno and saute until soft and onion is translucent. Add garlic and sautee until it’s just lightly browned. Add remaining ingredients. Stir, raise heat and bring to a boil. Then turn heat down to low. Simmer, covered, for 30 minutes, or until water is gone. Remove from heat and let sit for 10 minutes before serving.

Serve topped with sour cream or inside a tortilla a la rice and beans.

This recipe was fabulous!! I tweaked it to my liking and I ate most of it myself. I’m ready to make another batch. I did use chicken broth instead of water and used 2 cups versus the 3/4. Bulgar soaks up the liquid and I found I needed to add as it was cooking. I highly recommend this to anyone. Plus the simplicity of it is a bonus.

I had extra bulgur to use up from another recipe, so I decided to give this a try. Wow, was I impressed! It’s really easy, really cheap to make, and really, really yummy!
