Black beans and sweet potatoes are married together with Mexican spices and stuffed into hollowed out tomatoes.
Cut the tops off the tomatoes and carefully scoop out the flesh inside with a spoon. Season with salt and pepper and set aside.
Mix potatoes, beans, feta, lime zest, and spices together thoroughly and heat through. (Feel free to add flesh from tomatoes in mixture—my family prefers it out so I leave out.) Stuff in hollowed out tomatoes and top with additional feta if desired.
Serve with chili oil, salsa, and lime juice.
