Description

Simple Greek Spinach Pie.

Ingredients

  • ⅔ pounds Frozen Spinach, Thawed And Drained
  • ½ cups Scallions, Finely Chopped
  • ½ cups Cottage Cheese
  • 1 Tablespoon Unsalted Butter
  • 1 cup Milk
  • ½ cups Buttermilk Baking Mix (or Pancake Mix)
  • 3 whole Eggs
  • 1 teaspoon Lemon Juice
  • ¼ teaspoons Nutmeg
  • 3 Tablespoons Grated Parmesan Cheese
  • Salt And Pepper, to taste

Preparation

Preheat oven to 350ºF.

Layer spinach, scallions, and cottage cheese in a greased 9 or 10-inch pie plate or baking dish.

Combine remaining ingredients in a food processor or blender. Season with salt and pepper to taste. Blend until smooth and pour mixture over layers. Bake 35-40 minutes, or until a knife inserted in center comes out clean.
