Description

A flavorful way to get your greens!

Ingredients

  • 3 Tablespoons Cooking Oil
  • 1 whole Leek, Rinsed Well And Chopped Into 1/4-inch Pieces
  • 1 whole Bunch Of Leafy Greens, Such As Swiss Chard, Kale, Or Mustard Greens (separate The Stems And Leaves For Divided Use, Chop Finely)
  • 4 cloves Garlic, Finely Chopped
  • 1 Tablespoon Lemon Juice (about 1/2 A Lemon)
  • 4 whole Eggs
  • 1 cup Milk
  • ½ cups Heavy Cream Or Half-and-Half
  • ½ teaspoons Kosher Salt
  • 1 dash Coarsely Ground Black Pepper
  • 1 dash Ground Nutmeg
  • 1 Tablespoon Flour
  • 1 cup Shredded Asiago Cheese (about 6 Ounces)
  • 1 whole Pie Crust Pre Baked

Preparation

Preheat oven to 325 degrees F.

In a large skillet, heat oil to medium-high heat. Add chopped leeks and the stems of the greens to the skillet. Cook, stirring frequently until vegetables begin to soften, about 3-4 minutes. Add the chopped leafy greens (the leaves only), chopped garlic and lemon juice. Turn the heat down to medium and continue to cook until the vegetables are tender, another 6-8 minutes. Remove vegetables from the heat and set aside to cool.

While they’re cooling, whisk the eggs, milk, cream, salt, pepper, and nutmeg together in a medium-sized bowl. In a separate bowl, combine the shredded cheese and flour, mixing well to coat evenly. When the greens are slightly warm, add them to the egg mixture. Then add the cheese to the egg mixture and stir until everything is thoroughly combined.

Pour mixture into the prepared pie crust. Bake for about 40-45 minutes. The quiche is done when a knife inserted into the center comes out clean.

Makes 4-6 servings.

Notes:
1. My pie crust didn’t get too dark, but if yours does, cover the edges with some aluminum foil.
2. You could substitute any sharp-flavored cheese here, like Parmesan, manchego, feta, or even Swiss.
3. To prep a leek, cut off the darker green parts and use the rest as you would a green onion. Make sure to rinse them well. Leeks are known to be really gritty between layers.

I took this to Easter dinner yesterday, since there would be one vegetarian guest. Oh my! I made it with kale and fresh parmesan. Outstanding! Thanks for the great recipe.

This is very close to our family recipe, however none of us have used the combination of winter greens. Absolutely wonderful for those winter veggies here in CNY. Can’t wait to try this.

This was SO GOOD. My husband has never liked quiche, but he knows I love it and asked me to pick out a quiche recipe for him to make. I chose this one based on the reviews. Great recipe! I was looking for a yummy way to cook some kale. This recipe turned out fabulous. It took me a bit longer to prepare than the recipe indicates (took me about 35 minutes) and it took a bit longer to bake in my oven (65 minutes for me), but it turned out fabulous. I prepared this for company, and paired it with a salad and soup for a wonderful meal. Everyone loved it!

I love the flavors of this quiche! This was just as I remembered and I think it was the same recipe I had found before but couldn’t locate again (yay for Tasty Kitchen and it’s contributors!). Easy to put together also, great way to get some healthy greens in a truly delicious way. Hubby enjoys as well. =)
