Vegan Sushi with Avocado, Bell Pepper and Cucumber.
Boil rice in the water until soft, about 30 minutes.
Use a bamboo mat and put the seaweed on it. Add 1/2 cup cooked rice and the vegetables and avocado. Roll. The bamboo mat makes it easy to create a nice sushi roll.
Slice the sushi roll into pieces and serve with wasabi and soy sauce.
