Description

Sugar-free and moist with softened apple chunks inside. Healthy never tasted so good!

Ingredients

  • 1 cup Old Fashioned Rolled Oats
  • 1 cup Whole Wheat Pastry Flour
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoons Baking Soda
  • 1 teaspoon Baking Powder
  • 1 Tablespoon Sweetleaf Stevia Powder (See Note)
  • ½ teaspoons Salt
  • ¾ cups Low Fat Milk
  • 1 teaspoon Vanilla Extract
  • ¼ cups Canola Oil, Melted Butter Or Coconut Oil
  • 2 whole Eggs
  • 1 cup Applesauce (unsweetened)
  • 1 whole Apple, Peeled, Cored And Chopped
  • Chopped Nuts Or Granola, For Topping (optional)

Preparation

1. Preheat oven to 400ºF and coat a 12-capacity muffin tin with cooking spray.
2. In a bowl stir together the oats, flour, cinnamon, baking soda and powder, stevia and salt.
3. Add the milk, vanilla, oil, eggs and applesauce.
4. Add the apple chunks.
5. Add some chopped nuts on top, leave plain or even add some granola.
6. Bake for 20 minutes.

Note: I used only 1/2 tablespoon of stevia, making them only barely sweet which is fine for us. Increase to 1 tablespoon if your family is used to regularly sweetened muffins and treats.
