Description

Perfect, sugar-free, non-alcoholic summer drink. Light, lime-y, yummy!

Ingredients

  • FOR THE SUGAR-FREE SIMPLE SYRUP:
  • 1 cup Water
  • 1 cup Splenda
  • 10 leaves Mint
  • FOR THE LIMEADE:
  • ½ cups Fresh Lime Juice
  • 2 whole Limes, Zested
  • 5 cups Water
  • 2 cups Club Soda
  • 24 leaves Mint, Or 3 Leaves Per Jar
  • Ice

Preparation

You’ll also need eight 12-ounce mason jars.

For the simple syrup, in a small sauce pot, bring a cup of water to boil. Add the Splenda and stir to dissolve. Take the syrup off the heat and let cool for a minute or two. Once it has briefly cooled, add the mint leaves to the syrup and leave for about one minute. Take mint leaves out of the syrup, discard mint, and let syrup cool completely. (This will infuse the simple syrup with mint flavor).

Meanwhile, wash the limes with a little soap and water because you will be using them in the drinks. Zest 2 whole limes, keeping zest in a bowl. Cut limes crosswise and juice lime halves into the bowl with the zest (you’ll need about 4 limes or 8 lime halves for 1/2 cup juice). Keep the lime halves for the drinks. In a pitcher, add the cooled simple syrup, the lime zest and juice, and the water and club soda. Stir.

Fill each mason jar with 3 mint leaves, one juiced lime half, and ice, almost up to the top. Pour in about 1 cup of limeade, put the lid on securely, and shake vigorously. Remove lid and serve. You can either leave the sliver rim on or take it off.
