Description

A gluten-free, dairy-free, sugar-free soft serve “ice cream!” No ice cream maker needed!

Ingredients

  • 1 whole Ripe Banana, Semi-frozen
  • 1 Tablespoon Natural Peanut Butter, No Sugar Added
  • ¼ teaspoons Sweetleaf Stevia, English Toffee In Liquid Form
  • Chopped Walnuts, For Topping (optional)

Preparation

1. If you don’t have a banana already peeled and frozen, put one in the freezer for about 1 hour.
2. Using a food processor, place the banana in and let it go until you start seeing that is becoming very smooth, no lumps.
3. Add the peanut butter and stevia and continue to process until smooth again.
4. Pour it into a serving dish and place it back in the freezer for another 15 minutes.

That is it! Top with walnuts or even some dairy-free sugar-free whipped cream!

Note: If you don’t have any stevia, you can taste the mixture before placing it back in the freezer. It may be sweet enough for you or use 1 tablespoon of honey to sweeten.
