Description

Cinnamon spice granola with zero sugar! Sweetened naturally with raisins, coconut oil and almond extract.

Ingredients

  • 1 cup Sliced Almonds
  • 1 cup Raw Sunflower Seeds
  • 1 cup Raw Pumpkin Seeds
  • ½ cups Ground Flax Seeds
  • ¼ cups Melted Coconut Oil
  • ½ cups Raisins
  • 1 cup Gluten Free Oats
  • 1 teaspoon Almond Extract
  • 2 teaspoons Cinnamon

Preparation

1. Preheat oven to 350 F.

2. Put the nuts and seeds in a 9×13 cake pan or a large cookie sheet with sides. Put the pan into the oven and toast until slightly brown, about 15 minutes.

3. While you are toasting the nuts and seeds, heat the coconut oil in the microwave for a few seconds until melted.

4. Remove nuts and seeds from the oven and pour into a large mixing bowl.

5. Add the coconut oil, raisins, oats and spices into the bowl and stir until thoroughly combined.

6. Put the granola mixture back into the pan and spread it in an even layer. Bake it in the oven for another 10-15 minutes. Keep an eye on it and don’t let your raisins get puffy. If they do, that means they will be very hard after they cool. Trust me, I’m speaking from experience. You could break a tooth! Remove pan from oven.

7. Allow for cooling time then store in airtight containers. Enjoy!
