Description

It’s blueberry season, guys!

Ingredients

  • 1 whole Yellow Squash
  • 1 whole Spring Onion Or 1/4 Regular Onion
  • 1 clove Garlic, Peeled
  • ½ whole Fresh Jalapeno
  • 1 whole Lime, Juiced And Zested, Zest Reserved
  • ¼ cups Fresh Blueberries
  • 1 Tablespoon Torn Parsley Leaves

Preparation

Using a mandoline or very sharp knife, thinly slice the squash, onion, garlic and jalapeno. Put the veggies into a bowl. Toss the vegetables with the lime juice and let salad sit for 20-30 minutes until slightly softened. Add the lime zest and blueberries and stir together right before serving. Serve with a slotted spoon to eliminate some of the juices topped with the parsley. Enjoy!
