Rich peanut butter cookie dough taste without all the hassle of baking cookies! These make a great snack as they are not only delicious, but also highly nutritious.
Add oats and coconut into a food processor and pulse until just combined. Add the rest of the ingredients to the food processor and process on high until a smooth dough is formed, stopping to scrape down the sides of the bowl as necessary. Once dough consistency is reached, break into bite-sized pieces, roll into balls, put the balls on a plate and refrigerate for 20 minutes or so to harden (or pop into you mouth immediately!)
