Description

Wow! Talk about a flavour explosion in your mouth! This dish is creamy and satisfying, with a ton of Indian flair.

Ingredients

  • 4 cups Cauliflower, Chopped In Bite-sized Pieces
  • 3 Tablespoons Oil
  • 2 Tablespoons Lemon Juice
  • 1 Tablespoon Tandoori Seasoning
  • ½ teaspoons Salt
  • 1 whole Small Onion, Minced
  • 3 cloves Garlic, Minced
  • 1 Tablespoon Fresh Ginger, Minced
  • 2 teaspoons Chili Powder
  • 1 teaspoon Turmeric
  • 1 teaspoon Coriander
  • ¾ teaspoons Cumin
  • ¼ teaspoons Cinnamon
  • 4 cups Crushed Tomatoes
  • 1 cup Full-fat Coconut Milk
  • 1 Tablespoon Brown Sugar
  • Salt And Pepper, to taste

Preparation

Preheat oven to 425 F.

While oven is heating up, add chopped cauliflower, 1 tablespoon of the oil, the lemon juice, tandoori seasoning and salt to a large bowl. Mix well so that all of the cauliflower pieces are coated. Add cauliflower to a rimmed baking sheet in a single layer and cook in the preheated oven for about 15 minutes, or until lightly browned.

In a large skillet, add the remaining 2 tablespoons of oil and heat on medium heat. Once warmed, add onions and cook until translucent, about 10 minutes. Add garlic, ginger, chili powder, turmeric, coriander, cumin, and cinnamon, and mix well. Add crushed tomatoes, and mix until combined. Simmer on medium heat for about 15 minutes, then add coconut milk and sugar. Mix well and cook for another 5 minutes or until the sauce has thickened. Add salt and pepper to taste, then add in the cooked cauliflower and cook until everything is heated through.

Serve over rice, quinoa or grain of your choice (I used Basmati rice).

Yummy. I made this with butter chicken and it was a great side dish. Next time i think I will omit the cinnamon.

Fantastic! I’ve had this recipe open on my computer for weeks as we kept not having the right ingredients in the house at the same time. Finally, today, we just finished dinner. It was great! I think we undercooked the cauliflower a bit as I was worried it would be mushy if I overcooked it. It’s hot but not tears-in-your-eyes spicy. We served it over boring brown rice and it completely covered the boring. It made a lot of sauce! My husband is going to take the rest over pasta for lunch tomorrow. Thanks for sharing!
