This healthy vegan recipe has it all, from protein to nutrients. I’m a big fan of orange chicken, but I’m always looking for alternatives to make my food healthier and to make it taste better, which is how I came up with this recipe!
Preheat oven to 400ºF.
Heat 1 teaspoon olive oil in a nonstick pan, and fry tofu until golden brown. Bake tofu for 15 minutes or until tofu is crisp.
Heat orange juice, rice vinegar, soy sauce, and garlic ginger paste in a pan over medium heat. Dissolve cornstarch in a little water and add to the sauce. Heat until it thickens.
Heat remaining teaspoon of olive oil in the same nonstick pan and cook broccoli for 8 or so minutes or until browned and cooked.
Mix tofu with orange sauce, and top the broccoli with it. Enjoy!
