Ready in 10 minutes, no bake, gluten-free and grain-free! Tastes just like cookie dough!
1. In a large bowl, beat together the MELT® Organic and 3/4 cup peanut flour on high speed until combined and fluffy.
2. Stir in remaining 1/2 cup peanut flour until well incorporated. Then, stir in honey and mix well.
3. In a small food processor, process coconut sugar until broken down and a fine, powder-like consistency.
4. Roll the MELT® Organic mixture into 1-tablespoon-sized balls and then roll each ball in coconut sugar.
5. Devour.
Notes:
1. You will not use all of the sugar, but it helps to have some extra to make rolling easier
2. Bites are best stored in the refrigerator. If you want that really soft, cookie dough texture, just let them stand at room temperature for a few minutes before eating.
