Description

Elevate your pasta game with this easy and simple red lentil pasta topped with a delicious homemade cashew-based sundried tomato and garlic sauce.

Ingredients

  • 1 bag (12 Oz. Size) Red Lentil Pasta
  • 6 cups Water
  • 1 teaspoon Salt
  • FOR THE SUNDRIED TOMATO SAUCE:
  • 1 cup Cashews
  • 1 cup Water
  • 1  Red Bell Pepper
  • 6  Sundried Tomatoes (soaked)
  • 1 clove Garlic
  • 2 Tablespoons Lemon Juice
  • 1 teaspoon Onion Powder
  • ½ teaspoons Garlic Powder
  • ½ teaspoons Basil Powder

Preparation

Cook red lentil pasta according to package instructions (using 6 cups of water and 1 teaspoon of salt).

Make creamy sundried tomato sauce. Add all ingredients to a blender and combine until smooth. Add more salt if needed—sundried tomatoes tend to be salty on their own so I always taste test beforehand.

Drain pasta and return to the hot pot. Add 1/2 cup of vegan sundried tomato sauce and toppings into the pot and stir to combine. You can add more pasta sauce as needed to suit your taste. Serve and enjoy.
