Fluffy and wholesome vegan blueberry muffins made with oats, dates, applesauce and other healthy ingredients you’ll probably already find in your kitchen. Perfect breakfast, snack or dessert free of oil or refined sugar.
Put flax seed, soy milk, water, and dates into a bowl and set aside.
Preheat oven to 400ºF (200ºC) and prepare muffin forms or pan.
In a large bowl, add all of the dry ingredients: oat flour, baking powder, and cinnamon (also sugar if you want to use some).
Put the flax-date mixture, applesauce and vanilla in a blender and create a nice even mix. Pour mixture into dry ingredients and stir until everything is moistened. Fold in blueberries.
Pour the batter into muffin cups and bake for 20 minutes. Remove from oven and let cool before eating.
