Made with minimal ingredients and packed with protein to keep you full!

Ingredients

  • 3 Tablespoons Oat Flour (20g) Gluten Free If Needed
  • 3 Tablespoons Non-GMO Cornstarch (24g)
  • 1 teaspoon Baking Powder
  • 1 pinch Salt
  • 1 container (5 1/3 Oz. Size) Two Good Blueberry Greek Lowfat Yogurt, Divided
  • 1  Large Egg
  • ½ Tablespoons Fresh Lemon Juice
  • 1 teaspoon Honey, Plus Additional For Topping
  • ½ teaspoons Lemon Zest (packed)
  • Fresh Blueberries For Topping
  • Bee Pollen, For Topping (optional)

Preparation

Whisk flour, cornstarch, baking powder and salt in a small bowl.

n a medium bowl, whisk 1/4 cup yogurt, egg, lemon juice, honey and lemon zest. Add dry ingredients and whisk until combined.

Heat waffle iron up to the highest setting. Spray with cooking spray and pour half the batter into the iron (about a heaping 1/2 cup). Cook until waffle iron stops steaming. If you want your waffles extra crispy, you can cook them for 2 cycles of the waffle iron.

Top with the rest of the yogurt, blueberries, bee pollen (optional) and a drizzle of honey. Devour!
