Moist, pillowy peanut butter banana muffins. All the taste without the flour.
Preheat the oven to 400°F and line a 12-cup cupcake tray with paper liners. Set aside.
Combine all the ingredients except for the toppings in a blender or food processor (I used my NutriBullet), and blend until well-combined, about 2-3 minutes.
Use a kitchen scoop to divide the muffin batter evenly between the 12 lined muffin cups. Top each muffin with the desired toppings and bake at 400°F for 16-18 minutes, until the muffins are golden brown.
Let cool slightly, and enjoy!
