I’m still on the lookout for the dairy free ice cream of my dreams. Until I find it, I’ll keep blending up fruit into popsicles.
Juice the lime, then toss the juice and everything else into a blender and whiz it until everything is nice and smooth. Pour into popsicle molds and freeze until solid—at least 3 hours.
Note: My mold makes 10 popsicles, and there will be extra watermelon mixture left over. You can freeze the first batch, and wrap them up and freeze another round, or you can drink the watermelon mixture as is (yummy—agua fresca). Where are my tacos and black beans?
