A sugar-free vegan peanut butter cup substitute!
In a small bowl, combine the nut butter with the honey or maple syrup. Add the salt and vanilla. Mix until just combined.
Line a mini muffin pan with muffin liners. Very lightly coat with a neutral oil spray. Generously coat the bottom of each liner with chocolate. Place a small ball of the nut butter mixture, about 1 teaspoon, in each cup. Top with melted chocolate.
Makes 12-14 cups.
