Description

This mashed cauliflower is so delcious and creamy, you won’t be missing potatoes! It is the perfect, light side dish for any meal.

Ingredients

  • 1 head Cauliflower (a Large Head)
  • 3 Tablespoons Olive Oil
  • 3 cloves Garlic, Minced
  • ⅔ cups Fresh Chives, Finely Chopped
  • 1 sprig Fresh Rosemary, Chopped (or 2 Teaspoons Dried)
  • ¾ cups Full Fat Canned Coconut Milk
  • Salt And Pepper, to taste

Preparation

Wash and chop the cauliflower, and make sure to remove all the leaves. Place the chopped cauliflower in a large pot, and add just enough water to steam it (about 2 inches of water in the bottom of the pot). Place a lid on the pot, and bring the water to a boil. When it comes to a boil, turn the heat to low and steam until it’s easy to stick a fork into the cauliflower. This should take about 20 minutes.

While the cauliflower is steaming, add the olive oil to a skillet over medium heat. Saute the garlic, chives, and rosemary in the oil until the garlic is light golden brown.

When the cauliflower is done steaming, drain it and place it in a food processor to mash until smooth (no lumps). If you don’t have a food processor, you can use a masher. Place the mashed cauliflower back into the pot and turn the stove to medium low. Add the coconut milk and the chive and garlic mixture. Add salt and pepper to taste, and enjoy!
