Description

Typically, eating a low-carb or keto diet means you have to kiss breads goodbye, but not anymore—these cute little 4-inch “chaffles” are the perfect bread replacement for just about any kind of sandwich, like a juicy BLT!

Ingredients

  • 2  Large Eggs (100g)
  • 4 ounces, weight Shredded Low-moisture, Part Skim Mozzarella Cheese (120g)
  • 2 teaspoons Finely Ground Almond Flour (6g)
  • 2 teaspoons Heavy Cream (15g)

Preparation

Blend ingredients in a small blender or beverage blender. Pour 1/4 the batter into preheated mini waffle maker. Close lid and bake for 3 1/2 minutes. Repeat until all the batter is used. Serve cooked chaffles with plenty of melted butter, or cool and use to make sandwiches.

To build BLT, spread mayonnaise on one side of 2 chaffles and top each with a layer of lettuce, tomato, and cooked bacon. Complete each sandwich with a second chaffle that’s been spread with mayonnaise. Enjoy!
