Description

Who needs to go to Olive Garden when you can make it yourself!

Ingredients

  • 1 pound Ground Sausage
  • 1-½ teaspoon Crushed Red Pepper
  • 4 strips Bacon, Sliced In 1/2" Pieces
  • 1 whole Diced Onion
  • 4 cloves Garlic, Grated On A Microplane
  • 10 cups Chicken Stock Or Broth
  • 1 pound Russet Potatoes, Sliced
  • 1 cup Heavy Cream
  • ½ bunches Kale Leaves, Chopped

Preparation

Sauté Italian sausage and crushed red pepper in a large pot. Drain excess fat, and set aside while you cook the remaining ingredients.

In the same pan, sauté bacon, onions and garlic over low-medium heat for approximately 15 minutes or until the onions are soft. Add chicken stock/broth and sausage to the pot and heat until it starts to boil.

Add the sliced potatoes and cook until soft, about half an hour. Add the heavy cream and just cook until thoroughly heated. Stir in the kale, let all heat through and serve. Delicious!

Made this as one of the selections at our annual bonfire and soup party a few weeks ago. It is delicious! Only thing I may consider changing would be using spinach in place of the kale. The kale was excellent but the next day it gave the leftovers a bitter taste. If you’re going to polish it off right away, go for the kale,But if you anticipate leftovers maybe sub spinach.

Five stars, will definitely make this again….and again….and again!

Excellent!!! Thanks for sharing. This was as good, if not better, than Olive Garden’s. Slight change: green chard in place of kale. So, so, so good.
