Description

Healthy comfort food at it’s best! Paleo, Whole30 and the easiest weeknight family-friendly dinner!

Ingredients

  • 1-½ Tablespoon Olive Oil, Divided
  • ½ cups Onion, Diced
  • 1  Large Red Pepper, Diced
  • ½ cups Celery, Thinly Sliced
  • 1 Tablespoon Fresh Garlic, Minced
  • 1-¼ pound 93% Lean Ground Turkey
  • 4 teaspoons Chili Powder
  • 1 Tablespoon Paprika
  • 1-½ teaspoon Ground Cumin
  • ¼ teaspoons Cayenne Pepper
  • 1 can (14 1/2 Oz. Size) Fire-roasted Diced Tomatoes
  • 1 can (14 1/2 Oz. Size) Crushed Tomatoes
  • ½ cups Water
  • 2 Tablespoons Tomato Paste
  • 1 teaspoon Salt
  • Pinch Of Pepper
  • 2  Bay Leaves
  • ¼ cups Parsley, Chopped

Preparation

Heat 1 tablespoon oil in a large pan on medium high heat. Add onion, pepper, celery and garlic and cook until they begin to soften, about 3 minutes.

Add remaining oil and turkey to the pan. Cook until turkey begins to brown, about 3–4 minutes. Drain off any of the liquid.

Add spices and cook until turkey is no longer pink and spices are fragrant, about 3–4 minutes. Add fire-roasted tomatoes, crushed tomatoes, water, tomato paste, salt and pepper and stir until well combined. Bring to a boil.

Once boiling, stir in bay leaves. Turn heat to medium low and cover pan. Simmer for 30 minutes, stirring occasionally. Once simmered, remove bay leaves and stir in parsley. Devour!
