Description

Healthy, low cal, bone warming soup. Just what you need to get that resolution back on track.

Ingredients

  • 2 Tablespoons Smart Balance Light (or Other Low Calorie Margarine Spread)
  • ⅓ cups Chopped Red Onions
  • 4 cloves Garlic, Minced
  • 1 Tablespoon Flour
  • 6 cups Low Sodium, Fat Free Chicken Broth
  • 3 cups Butternut Squash, Fresh, Peeled, Seeds Removed And Chopped
  • ⅔ cups Macaroni Noodles
  • ⅓ cups Shredded Sharp Cheddar Cheese
  • ½ teaspoons Chili Powder
  • Salt And Pepper, to taste
  • 1 cup Chopped Tomatoes

Preparation

In a large pot or Dutch oven over medium high heat, melt the Smart Balance Light. Add the onions and cook until opaque. Add the garlic and stir until you can smell them cooking, about 20 seconds. Add the flour and whisk until combined. Add the broth and bring to a boil. Add the cubes of butternut squash. Place the lid on the pot at an angle allowing the steam to vent. Boil until the squash is very soft, about 20 mintues.

Remove pot from heat and allow the mixture to cool a bit. Using an immersion blender, puree the squash mixture until smooth and creamy. Return to heat. Add the noodles and cook until they are al dente (use the timing provided on the package for al dente). Then add the cheese and stir until melted. Remove from heat and add the spices, adjusting to your preference. Add to bowls and top with chopped tomatoes.

This was really good. A little sweeter than I had expected with the butternut squash but super yummy and didn’t taste low cal at all.
