The flavors are simple but classic: onions, garlic and bacon form the starting base of the soup and it builds simply with a stash of vegetables, small pasta, white beans and a light tomato broth.
Heat the oil over medium heat in a large pot until shimmering. Add the onion and bacon and sauté until the onion is translucent, stirring frequently. Add the garlic and stir, cooking for one minute. Add all the other ingredients except the pasta and simmer, stirring occasionally, partially covered for 20-30 minutes, until the vegetables are tender. Add the pasta and simmer for 10 minutes longer. Serve.

Loved this! Made a few small changes by adding mushrooms and subbing italian sausage for bacon.
Made little parmesan toasts to go with this.

Hi, Melanie! This is a wonderful, hearty soup. Since I’m a died-in-the-wool carnivore, I cooked a pound of ground beef with the onions. Also, because of this, I swapped out the chicken broth for beef broth. Everything else I left the same and it is absolutely delicious! Thank you for adding to my cold-weather soup repertoire!

This is delicious. There is definitely room to tweak this recipe, if you so desire. Makes a great light lunch with cheese and crackers.
