The water chestnuts and almonds give this chicken salad a nice crunch. I love this salad on a croissant!
In a large bowl, combine chicken, rice, water chestnuts and green onion. In a small bowl, combine mayo, milk, lemon juice, salt and pepper. Pour over chicken and toss to coat. Refrigerate. Fold in grapes and almonds before serving.
