Bring on the crunchy and the chewy with this nutritional powerhouse of a salad.
1. Rinse the wheat berries well under running water. An overnight soak isn’t necessary.
2. Bring stock to a boil, add the wheat berries, cover and reduce to a simmer. These will take a solid hour to cook thoroughly but start checking them at around 45 minutes and stir or add water as needed.
3. Given the time it takes to cook the wheat berries, you could do the rest of the prep now. Chop the scallions, celery, parsley, carrots, garlic and almonds and place them in a large mixing bowl.
4. Add in the wheat berries when they finish cooking and mix well. Season to taste and add the oil and vinegar.
