Quick, healthy and delicious!

Ingredients

  • FOR THE SALAD:
  • 2 whole Tomatoes
  • Olive Oil, To Drizzle On Tomato Wedges
  • Salt And Pepper, to taste
  • 1 whole Apple
  • 2 whole Goat Cheese Rinds
  • 1 whole Avocado
  • 1-⅞ ounces, weight Green Salad
  • 1 bunch Almond Flakes
  • _____
  • FOR THE VINAIGRETTE:
  • 5-½ Tablespoons Honey
  • 3 Tablespoons Apple Cider Vinegar
  • 1 pinch Salt
  • 1 pinch Freshly Grounded Pepper
  • 5 Tablespoons Extra Virgin Olive Oil
  • 1 dash Lemon Juice

Preparation

Cut the tomatoes in 6 to 8 wedges each, place on a baking tray, drizzle with olive oil, season with salt and pepper and place under a hot grill in the oven for 15–20 minutes.

For the vinaigrette, whisk together honey and vinegar till the honey has dissolved. Season with salt and pepper and slowly add the olive oil till you have a homogenous sauce. Dip a salad leaf to taste if you are happy with the vinaigrette. You may add a dash of lemon juice, salt, pepper as needed.

Cut the apple in wedges, dip in the vinaigrette to coat, then quickly chargrill on both sides.

When the tomatoes are nicely grilled, take them out of the oven. Turn of the grill. Place the goat cheese on a baking tray and put in the warm oven for a few minutes.

Peel the avocado and slice it up.

To serve, on the plates arrange the salad leaves, apple, avocado and tomato wedges. Top with warm goat cheese, sprinkle some almond flakes and spoon over some vinaigrette. Enjoy!
