Description

This delicious salad is often found on my table whenever serving chicken, turkey, seafood, or beef. I like to chill this in individual decorative molds, placing them on micro greens or butter lettuce, topped with a dollop of mayonnaise. Enjoy this southern favorite!

Ingredients

  • 1 envelope (1/4 Oz. Envelope) Plain Gelatin
  • 2 cups Tomato Juice
  • 1 box (3.4 Oz. Box) Lemon Jello
  • 1 Tablespoon Fresh Lemon Juice
  • 1 Tablespoon Sugar
  • ½ teaspoons Sea Salt
  • ⅛ teaspoons Freshly Ground Pepper
  • Hot Sauce, To Taste (I Use Frank's)
  • ¼ cups Minced White Onion
  • ¼ cups Minced Celery

Preparation

Bloom (dissolve) gelatin in 2 tablespoons of tomato juice until soft.

Heat remaining tomato juice, adding the lemon Jello, lemon juice, sugar, sea salt, and pepper. Stir well until dissolved.

Add hot sauce to taste.

Cool, allowing mixture to slightly thicken.

Add miced vegetables and place in large or individual molds, chilling until set.

Unmold onto a chilled plate atop greens and enjoy.
