Description

Get to know quinoa. It can be your friend during these hot summer months!

Ingredients

  • ⅓ cups Quinoa, Rinsed And Drained
  • ⅔ cups Water
  • ½ whole Avocado, diced
  • ¼ whole Orange, Peeled And Diced
  • 2 pieces Pickled Jalapeno Slices, Minced
  • 1 Tablespoon Fresh Cilantro, Minced
  • Salt And Pepper
  • 1 Tablespoon Sour Cream, To Serve
  • Tortillas, To Serve

Preparation

1. Rinse the uncooked quinoa in a fine mesh strainer (to wash away the bitter, powdery outsides). Place in a pot with the water. Bring to a boil, cover, and reduce to a simmer. Let cook for 15 minutes.
2. Meanwhile, dice the avocado and orange. Mince the jalapeno and cilantro, then add with the avocado and orange. Season with a pinch of salt and pepper.
3. Carefully fold in the avocado and orange mixture to the cooked quinoa. Sprinkle with a bit more cilantro and add a dollop of sour cream. Eat with tortillas.

I really enjoyed it, my husband thought it needed more spice since I didn’t add the jalapeno, I didn’t have it on hand, so I added other spices and some feta cheese and lime juice to it and it turned out great!
