A smoky spicy dressing that is perfect on a simple salad of shredded romaine lettuce and torn spinach leaves. It’s very good on a salad served alongside of chili or a cumin-heavy dish.
1. Peel and separate the clementine sections. Add the clementines to a blender.
2. Peel a clove of garlic and chop in half. Throw garlic in the blender with the clementines.
3. Add the water, olive oil, vinegar, salt, cayenne pepper and smoky paprika into the blender. Put the lid on the blender and blend for a minute until the dressing looks creamy yellow and smooth. Take lid off and adjust the seasoning to taste (more salt or cayenne). Blend another few seconds to combine the seasonings.
4. Pour or spoon over salad and enjoy immediately.
