This is my salad dressing of choice. I always have the 3 simple ingredients in the pantry. It allows the ingredients in your salad to be the star, but also brings something special to the dish. Triple the recipe and keep in a small jar in your fridge for fresh dressing all week.
You can prepare this dressing either in a small jar and shaking with the lid on to emulsify the ingredients, or directly in your salad bowl using a whisk to combine.
Start by adding the salt, pepper and vinegar to the Dijon mustard. Whisk briefly or shake to combine, then add in the olive oil and whisk or shake till well emulsified.
In the summer you can add fresh herbs such as parsley, thyme, oregano or basil to the dressing – divine!
Do this immediately before serving the salad to make sure the mixture remains emulsified.
