A delicious dressing for salads, burritos, tacos, veggies and much more!
Start by roasting the tomatillos. Remove the husks, wash, quarter, and roast on a baking sheet for a few minutes until they brown a little.
Then just add them and all the other ingredients to a blender and blend until smooth.
You can also skip the roasting and add the tomatillos raw if that’s your preference.

I made this dressing yesterday for a taco/buffet party. I used a food processor to blend everything. Worked like a charm. I let it chill about 3 hours before serving. I definitely recommend doing that.
The taste is fantastic. We used it as a dip with veggies and chips and on the burrito’s. Really yummy.
