Description

This has been a staple meal in our house for quite a few years now. It is a kid and hubby favorite! I love it because it is easy and yummy!! I also usually have all the ingredients on hand!

Ingredients

  • 1 pound Ground Hamburger Or Turkey
  • 1 package Taco Seasoning
  • 1 can Black Olives Sliced
  • 1 can Ranch Style Beans Rinsed
  • 2 cups Shredded Cheese
  • 1 cup Shredded Carrots
  • 1 head Lettuce Chopped
  • 1 bag Nacho Cheese Doritos Crushed
  • 1 bunch Small Green Onions, Sliced
  • 1 bottle Catalina Salad Dressing
  • 1 whole Tomato, Diced

Preparation

First, brown 1lb. ground beef or turkey with 1 packet of taco seasoning. When cooked set aside and let cool.

Next, drain and rinse 1 can ranch style beans and 1 can black olives. Slice the olives.

Chop 1 head of iceberg lettuce into pieces, cup up one tomato and grate 1 cup of carrots.

Add it all together in a LARGE bowl.

Call your kids in and make them help! Add 1 package of your favorite yellow cheese mix. Then almost an entire bag of nacho cheese Doritos crushed and a bottle of Catalina salad dressing. If you can find the sweet honey Catalina, great, if not just use regular.

Add the cooled meat and cheese. If taking to a potluck, wait and put the dressing on when you get there.

Have your kids crush the Doritos up into the salad.

Serve with sliced avocado

We’ve loved this recipe for ages too! Thanks for putting it out there for others to enjoy. One tip… I mix all ingredients minus the crushed chips. When serving, I put a bed of crushed chips on a plate and pile on the salad part, no more soggy chips.
Also, I liked the tip about using Fritos and ranch, I will have to try this sometime.

MMMMMH. . . this is sooo good. My mother in law first introduced it to me and uses Fritos and ranch instead. It is just personal preference though. Such an easy and delicious meal!

This is a childhood favorite & always a dish we made on our camping adventures. It is super easy & has a wonderful flavor, but doesn’t keep well as the chips do indeed get soggy. Great idea Laurie – keeping the ingredients separate so each person can make his own -I will surely try that next time we make this.
